Sweet & Salty Mac & Cheese and Strawberry Vinaigrette Dressing

Sweet & Salty Mac & Cheese
5 Tbsps. butter
6 Tbsps. flour
3 cups milk
2 cups Parmesan cheese
8 oz. cream cheese
1 lb. cooked pasta
1/2 cup honey
1 lb. cooked bacon, crumbled

Preheat oven to 350 degrees. In a large saucepan, melt butter; whisk in flour and milk. Reduce heat to low and cook until mixture has thickened, about 2 minutes. Add Parmesan cheese and cream cheese, a little at a time; stir until all cheese is melted. Stir in pasta, honey and 3/4 of the bacon, mix well and put in a greased 2 1/2 quart casserole dish. Top with remaining bacon and bake for 20-25 minutes.

Strawberry Vinaigrette Dressing
1/2 lb. strawberries
2 Tbsp. honey
2 Tbsp. apple cider vinegar
2 Tbsp. olive oil
1/4 tsp salt
1/4 tsp pepper

Put all ingredients in a food processor and blend until smooth. Add more honey to taste. Excellent dressing with spinach and feta cheese.
