Honey Mustard Mayonnaise
3/4 cup mayonnaise
1/4 cup honey
2 Tbsp Dijon mustard
1 tsp horseradish
Combine all ingredients, mix thoroughly. Makes one cup. Serve as a salad dressing, a dip for fresh vegetables, as a sandwich spread or heat slightly and spoon over cooked vegetables.
Honey Spice Marinade
1/4 cup honey
1/2 cup oil
1/2 cup lemon juice
2 Tbsp soy sauce
2 tsp ginger
2 tsp dry mustard
2 tsp salt
1/4 tsp pepper
2-3 cloves garlic, peeled and crushed
Combine all ingredients in a 2 cup container. Cover and shake to blend. Makes 1 1/2 cups. Excellent marinade and basting sauce for poultry.
Honey Orange Sauce
1 cup honey
1 cup orange juice
3 Tbsp butter
3 Tbsp cornstarch
Mix cornstarch with part of the orange juice until dissolved. Add to remaining ingredients. Cook, and stir over medium heat until thickened. Use as a dipping sauce for chicken nuggets, or turkey, or as a glaze for baked ham or poultry.
Honey Popcorn Balls
14- 16 cups popped popcorn
2 cups sugar
2/3 cup honey
1/2 tsp salt
1/2 cup water
6 Tbsp butter
Place popcorn in a large heat resistant bowl; set aside. Combine remaining ingredients in a saucepan. Cook over medium heat while stirring to dissolve sugar. Wipe down sides of pan before it begins to boil to remove any un-dissolved sugar crystals. Cook to firm ball 245 degrees). Remove from heat and add 1 tablespoon vinegar. Pour over popcorn and stir until all syrup is absorbed. With slightly wet hands form the popcorn mixture into balls. Wrap in plastic wrap, or sandwich size baggies.
Honey Lemonade
In a 2 quart pitcher, dissolve 3/4 cup honey in 1 quart room temperature water. Add 1 package unsweetened lemonade mix (Wyler’s or Kool-Aid), water, and ice to make 2 quarts.
For strawberry lemonade, thaw 1 package frozen strawberries in syrup. Add Tbsp. strawberry mixture to each glass of lemonade.
