Barbecued Beef & Company Hash Browns
Barbecued Beef
2 – 3 lb beef roast
2 tbsp lemon juice
3 tbsp Worstershire sauce
1 cup water
2 tbsp mustard
1/2 cup chopped onion
2 tbsp vinegar
1 cup ketchup
1/3 cup brown sugar
Salt & Pepper to taste
Put beef roast in a roaster. Combine remaining ingredients in a separate bowl and mix well; pour over roast and cover. Bake @ 350 degrees for 4 hours or until roast pulls apart easily with a fork. Serve with hamburger or party buns.
Company Hash Browns
1 large package frozen hash browns
1 can cream of mushroom soup
1 can cheddar cheese soup
1 small carton sour cream
1/2 cup chopped onion
3/4 cup green pepper
Salt & Pepper to taste
Preheat oven to 350 degrees. Spread hash browns in the bottom of a greased 9 x 13 in pan. In a separate bowl combine rest of ingredients; mix well & pour over hash browns. Cover with aluminum foil and bake for 1 hour, 45 minutes.
Variations: Can add shredded cheese on top of potatoes 5 minutes before end of baking and put back in oven to melt. Can also use different kinds of soup, cream of potato or cream of celery.
