Zucchini Bread & Zucchini Skillet Hot Dish

Zucchini Bread

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 cups grated zucchini
  • 3 tsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 3 tsp cinnamon
  • 1 cup nuts (optional)

Combine eggs, vegetable oil and sugar, mix well. Add remaining ingredients except zucchini and mix well. Combine grated zucchini to mixture, mix well. Pour mixture into 2 large loaf pans or 5-6 small loaf pans. (Make sure pans are well greased). Bake at 350 degrees for 1 hour for large loaf pans or 50-55 minutes for small loaf pans.

 

Zucchini Skillet Hot Dish
  • 2 tbsp cooking oil
  • 2-3 cups sliced zucchini
  • 8 oz frozen or 1 can corn
  • 2 tsp chopped jalapeño pepper
  • 2 chopped garlic cloves
  • 1 cup shredded cheddar cheese
  • 1/4 tsp salt (optional)

Sauté corn in cooking oil until liquid is gone. Add chopped garlic, jalapeño pepper, zucchini and salt; sauté until tender. Top with 1 cup cheddar cheese. Serve immediately.
