  Chili & Corn bread Print Version

Chili

  • 1 1/2 lbs hamburger
  • 1 15 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 1 15 oz can kidney beans
  • 1 15 oz can chili beans
  • 1/2 cup chopped green pepper
  • 1 chopped jalapeņo pepper (optional)
  • 1 can mushrooms (optional)
  • 1 large onion
  • 3 tbsp chili powder

Brown hamburger until no longer pink; add remaining ingredients and simmer for 30 minutes. Serve with corn bread or crackers.

Corn Bread

  • 1 cup butter (no substitution)
  • 1 cup half & half
  • 2 eggs (beaten)
  • 2 cups Bisquick
  • 1 cup corn meal
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda

Preheat oven to 350 degrees. Heat butter and half &half together just until butter is melted; add beaten eggs and whisk until well blended. Add Bisquick, corn meal, sugar, salt and soda to butter mixture; blend well. Pour into greased 9 x 13 in pan. Bake for 25-30 minutes
