Onion & Cheese Bread

  • 1/2 cup chopped onion
  • 1 tbsp butter
  • 1 egg, beaten
  • 1/2 cup milk
  • 1 1/2 cups biscuit mix
  • 1 cup sharp cheddar cheese
  • 2 tbsp melted butter

Preheat oven to 400 degrees. Cook onion over medium heat in butter until tender and lightly browned. Whisk egg and milk together and until blended; add to biscuit mix and stir until moistened. Add onion and cheese and blend well; pour into grease 8 or 9 inch baking dish. Drizzle melted butter over dough. Bake for 20-25 minutes. Serve hot.

French Onion Soup

  • 1/4 cup butter
  • 3 onions, thinly sliced
  • 1 tsp sugar
  • 1 tbsp flour
  • 2 1/2 cups water
  • 1/2 cup red wine
  • 2 – 10.5 oz cans condensed beef broth
  • 1 French baguette
  • 8 oz sliced Swiss cheese

Melt butter in a large saucepan. Stir in sugar. Cook onions over medium heat for 10 – 15 minutes until golden brown. Stir in flour until well blended with onions. Add water, wine and beef broth and heat until boiling. Reduce heat and let soup simmer covered for 10- 15 minutes.

Cut four 1 inch thick slices of bread and toast in oven or toaster until lightly brown. Ladle soup into oven safe bowls. Put toasted bread on top of soup and fold Swiss cheese slices and place on bread. Place bowls on cookie sheet before transferring to oven; bake for 10 minutes @ 425 degrees or until cheese is melted.
