Beef Stroganoff Sandwich & Easy No-bake Cheesecake

Beef Stroganoff Sandwich

  • 2 lbs ground beef
  • ½ cup chopped onion
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp pepper
  • 1 loaf French bread
  • Butter or margarine softened (optional)
  • 2 cups sour cream
  • 2 tomatoes seeded & diced
  • 1 large green pepper diced
  • 3 cups shredded cheddar cheese
In a skillet, brown ground beef & onion, drain any excess juices. Add salt, garlic powder & pepper to meat mixture and mix well. Cut bread lengthwise in half and butter both halves & place on baking sheet. Remove meat mixture from heat and stir in sour cream then spread on bread. Sprinkle the tomatoes, green peppers & cheese on top of meat. Bake @ 350 degrees for 20 minutes or until cheese is melted. (Note – may bake up to 25 minutes if you want a crispier bread) Yield: 8-10 servings.

Easy No-bake Cheesecake

  • 1 can condensed milk or (homemade condensed milk – see below)
  • 1 8 oz package of cream cheese
  • 1/3 cup lemon juice
  • 1 tsp vanilla
  • 1 can blueberry or cherry pie filling
Crust
  • 2 cups crushed graham crackers (1 package)
  • 1/3 cup melted butter

Mix crushed graham crackers & melted butter and press into 9 x 13 in pan. Bake @ 375 degrees for 8-10 minutes. Set aside and let cool completely.

In blender mix condensed milk, cream cheese, lemon juice and vanilla until smooth. Pour mixture in cooled graham cracker crust and chill for 10 minutes in refrigerator. Top with 1 can blueberry or cherry pie filling and chill in refrigerator for at least 2 hours before serving.

Note: To make homemade condensed milk use the following ingredients.

  • 1 cup instant milk
  • 1/3 cup boiling water
  • 3 tbsp margarine
  • 2/3 cup sugar
  • Pinch salt
