Hawaiian Stuffed Peppers & Chocolate Chocolate Chip Banana Bread
Hawaiian Stuffed Peppers
2 cups minute rice
4 chicken breasts (cubed).
2 tablespoons olive oil
1 large can of pineapple chunks
1 bottle of teriyaki sauce
6 bell peppers
Preheat oven to 375 degrees. Hollow peppers and set aside. In a large skillet cook chicken with olive oil until no longer pink. While chicken is cooking, prepare rice as directed on box; add rice to chicken along with the remaining ingredients; fill peppers and bake for 60 minutes.
Chocolate Chocolate Chip Banana Bread
1/4 cup butter
1/2 cup sugar
1 tsp vanilla
1 cup flour
3 tbsp cocoa powder
1/4 tsp salt
1/4 cup cream cheese softened
1 egg
2 large ripe bananas
1/2 cup Greek yogurt or 1/2 cup sour cream
1 tsp baking soda
1 cup chocolate chips
Preheat oven to 350 degrees. In a large mixing bowl, cream butter, sugar, cream cheese and egg together until blended well; add remaining ingredients to cream mixture and mix well. Pour batter into 2 small greased loaf pans; bake for 45 minutes or until knife comes out clean.
